Oatmeal Buttermilk Pancakes

Breakfast just got delicious! Do you ever find yourself running out of quick, easy and delicious breakfast ideas to feed your people? This pancake recipe is super simple and fast to make and is a crowd pleaser for the win! Even my non-pancake-loving husband likes these pancakes. Double or triple the batch and freeze some for later. It doesn’t get much easier than this :).

In a medium mixing bowl combine the oats and butter milk.
Microwave on high for 1 minute. Let stand for 10 minutes.

Add the egg, yogurt, and the rest of the dry ingredients and stir well to combine. Preheat your griddle.

Ladle the pancakes onto a preheated HOT griddle. I use an icecream scoop to do this. It helps me make sure all the pancakes have an even amount of batter and is less messy than using a traditional ladle.

When the pancakes start to bubble on the top they are ready to be flipped.

Flip the pancakes and cook on the opposite side for about a minute.

Remove the pancakes from the griddle and place them on a plate while you cook the remaining pancakes.

Serve warm with plenty of butter and maple syrup.
