Quick And Easy Vegan Cheese Sauce

Nothing taste better than nachos made with homemade baked tortilla chips, cheese sauce and salsa. When I was completely dairy free I really needed a quick and easy “cheese” sauce that would make taco night at my house more pleasant.

My nut-free vegan sauce is really good, but it takes time to prepare and cook as it calls for cooked potatoes.  This recipe is nut and potato free and I can throw it together in less than 15 minutes for quick and delicious tacos, taco salad, nachos, mac ‘n cheese or anything that cheese sauce tastes good on, even pizza!

Quick And Easy Vegan Cheese Sauce
1/2 cup quick oats
1/4 cup nutritional yeast
2 tbsp. corn starch
1/4 cup chopped red bell pepper
2 tsp. dry onion
2 tsp. paprika
1 tsp. garlic powder
1 1/2 tsp. salt
2 cups water

Place all ingredients in a blender.  Blend on high for one minute.  Pour mixture into sauce pan.  The mixture will be very thin a not look very appetizing.  I promise you will love the results.  Stir constantly with a wire whisk over medium-high heat for several minutes until the mixture is thick an bubbly.  The sauce will have changed from that icky looking color to a nice bright orange cheesy color.  Serve hot over your favorite dish that requires cheese sauce.
