Waffle Hash Browned Potatoes

These are quick and easy to make and satisfy a hungry appetite.  Crispy on the outside, soft on the inside, these make a perfect breakfast main dish or as an accompaniment to other breakfast dishes.

Waffle Hash Browned Potatoes
8 small or medium potatoes
1/2 tsp. salt
2 tbsp. nutritional yeast
1 tbsp. dried parsley

Preheat your waffle maker on the highest setting.  I use a couple of short sprays of cooking spray so my potatoes don’t stick.  Peel and grate 1/2 of the potatoes. Place them in a bowl.  Stir in 1/2 of the salt, nutritional yeast and dried parsley.  Divide the mixture in to for equal portions.  Place one portion on each section of the waffle iron.  Mine is a square four-section waffle iron.  Close the lid and cook until the potatoes are golden brown and crispy.  While the first 1/2 of the batch is cooking, mix the second 1/2 up.  Immediate remove first batch of potatoes from the waffle iron and replace with second 1/2.  Serve hot.
