Chicken Cakes

Before I had my gall bladder removed I used to love tuna cakes and salmon cakes.  But alas, tuna, salmon and fish in general is no longer my friend.  This week I had some cooked chicken breast in my refrigerator that I needed to use up and chicken cakes fit the bill.  Not only did I love them, my husband devoured them too!

This recipe doubles easily but for the three people in my household  I just used two large chicken boneless, skinless chicken breast that had been cooked, cooled completely (cold is better) and shredded.

Next add the nutritional yeast, salt, pepper, garlic powder, lemon juice, milk, egg and some kind of dried bread product that is ground into crumbs.  You could use bread crumbs, crackers, dried corn flakes or rice crispies.  All I had on hand was Barbara’s Brown Rice Crisps, so that is what I used.  Mix the whole combination up together until well blended.

Once you have everything mixed up start shaping your patties.  You can make them what ever size you want, but I used an ice scoop to get even sizes.  This made eight chicken cakes.  Place them in a large skillet sprayed with your favorite cooking spray.  Cook over medium high heat until golden brown on both sides.
Remove from heat and plate it up!  I served ours with boiled baby fingerling potatoes and carrots.

Chicken Cakes
2 large chicken breast, cooked, cooled and shredded
1 tbsp. nutritional yeast
1/2 tsp. salt
1/4 tsp. black pepper
1/2 tsp. garlic powder
1 tsp. lemon juice
1 cup dried bread crumbs, crackers, cereal (ground fine)
1 large egg
1/2 cup plant-based milk

Combine the chicken, nutritional yeast, salt, pepper, garlic powder, lemon juice, milk, egg and some kind of dried bread product that is ground into crumbs.  You could use bread crumbs, crackers, dried corn flakes or rice crispies.  Mix the whole combination up together until well blended.  Once you have everything mixed up start shaping your patties.  You can make them what ever size you want, but I used an ice scoop to get even sizes.  This made eight chicken cakes.  Place them in a large skillet sprayed with your favorite cooking spray.  Cook over medium high heat until golden brown on both sides.
